Lòng trắng trứng, 1 muỗng cà phê nước cốt chanh cho ra bát, dùng máy đánh cho đến khi trứng bông lên. Tiếp đó, cho 100g đường bột vào bát lòng trắng trứng (đổ đường qua rây), dùng máy đánh cho đến khi đường tan, trứng bông xốp. Chia hỗn hợp trứng đã đánh ra 2 bát. Một bát thêm bột matcha, bát còn lại thêm bột cacao, dùng thìa hoặc đũa trộn thật đều cho đến khi bột sánh mịn và tạo thành 1 hỗn hợp đồng nhất.
Múc hỗn hơp bột vào túi bóp kem, lắp đui sò khép. Phun bánh vào khay có lót giấy nến. Cho bánh vào lò nướng khoảng 10-15 phút đến khi bánh chín.
