Món bò kho trứng cút theo kiểu này vừa thì từng miếng bò vừa mềm lại vừa ngọt đậm đà ăn kèm với trứng cút bùi thơm rất là ngon miệng đó. Bò rửa sạch cắt khúc dài 5cm. Ngâm thịt bò trong nước lạnh khoảng 30 phút. Trứng cút luộc chín bóc bỏ vỏ.
Hành tây bóc vỏ bổ đôi, gốc hành cắt khúc, tỏi bóc vỏ, gừng thái lát. Cho 2 lít nước vào nồi, thêm hành, tỏi, gừng, hạt tiêu vào đun sôi. Cho thịt bò vào, mở nắp nồi và đun sôi ở lửa lớn trong 5 phút sau đó đậy nắp nồi và hạ nhỏ lửa. Bạn đun thêm khoảng 35-40 phút.
Sau khi ninh thịt bò nhừ, lượng nước trong nồi còn khoảng 1/3 thì lấy thịt bò ra. Bạn lọc lấy phần nước luộc thịt bò. Thịt bò nguội bớt thì xé nhỏ thịt bò.
Cho nước lọc thịt bò vào nồi, thêm nước tương, đường, rượu gạo và ớt vào đun sôi. Cho thịt bò, trứng cút vào đun sôi khoảng 3 phút ở lửa vừa là xong.
